Baby Carrots
Broccoli
Cauliflower
Zucchini sliced into bite size pieces
EVOO
Pepper
Garlic Salt
Minced Onion

Directions:
Directions:
Pre-heat oven to 350
Arrange all the veggies on a cookie sheet
Cover with EVOO (Extra Virgin Olive Oil)
Add minced onion, garlic salt and pepper
Toss veggies with your hands to make sure they are all coated evenly
Cook for 20-25 min or until just starting to get golden brown, mixing half way through

You can mix and match and add whatever veggies you like. If you like your veggies to have a little bite to them then don't cook them as long, I would recommend around the 15 min mark. If you like a little spice, instead of the seasonings in the recipe, you could add Cajun seasoning instead.
