Mediterranian Pasta Salad Recipe

Michelle Pilafas


Marinade Ingredients:
2/3 c. olive oil
3 tbsp. red wine vinegar
1/4 tsp. chopped basil
2 tbsp. green onion
2 tbsp. Parmesan cheese
1/4 tsp. oregano
1 medium tomato
1/4 tsp. salt
1 tbsp. ground pepper

12 oz. rotelle pasta, boiled and cooled
1 each red, green, yellow pepper, chopped
1/2 c. black olives
1 - 8 oz. mozzarella cheese, cubed

Combine all marinade ingredients in blender. Blend until smooth. Pour over pasta. Add chopped peppers, olives, and cheese cubes. Toss until all covered.
