Easy Salmon Cakes Recipe

1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green onion
1/4 cup mayonnaise
1 Tblsp lemon juice
1/4 tsp seasoned salt
Cayenne pepper to taste
1 beaten egg
2 (6 oz) cans pink salmon
1 cup dry bread crumbs, divided
3 Tblsp butter

Pick through fish to make sure there are no bones or bits of dark skin. Remove and discard if you find any. In small bowl, combine the chopped red pepper, green onion, mayonnaise, lemon juice, seasoned salt and cayenne pepper. Adjust seasonings to your taste. Stir in egg, salmon and 4 Tblsp bread crumbs. Refrigerate for 45 minutes to firm the ingredients. Melt the butter over medium heat. When salmon mixture has firmed, form mixture into 6-8 balls. Roll salmon balls in remaining bread crumbs. Flatten into cakes about 1/2 inch thick. Fry salmon cakes in melted butter over medium heat 3-4 minutes per side. Serve immediately.

These can be refrigerated and reheated in the oven or microwave.
