3 pounds zucchini (about 6 medium) trimmed and cut into 1" dice
3 garlic cloves, smashed
2 TBS Olive Oil
3/4 tsp dried oregano
3/4 tsp salt
5 cups broth

Directions:
Directions:
1. Preheat oven to 425
2. On a large rimmed baking sheet, toss together the zucchini, garlic, oil and spices. Roast until it begins to turn translucent and can easily be pierced with a fork, 25 to 30 minutes
3. Put zucchini and broth in a soup pot. and puree with a stick blender.
4. Bring to a boil, reduce heat to low and simmer for 10 minutes so the flavors can come together.
5. Serve and garnish with parmesan.
