1 1/2 cups dried red beans, rinsed
3 cups water
one 13.5 oz can coconut milk
3 stalks celery, cut into medium dice
1 bay leaf
1 tsp chili powder
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper

Directions:
Directions:
Combine all ingredients in a slow cooker. Cover and cook on high for 7 to 8 hours, until the beans are tender. Remove bay leaf and serve.
