½ bushel of Beets, cleaned
4 cups of Apple Cider Vinegar
8 cups of Water
3-4 Tablespoons of Pickling Spices
2 cups of White Sugar

Directions:
Directions:
Place the cleaned beets into boiling water and cook till you can put a fork through them. Remove from water and let cool. Remove the skin from the beets and cut into small ¼ inch chunks.


Into a large pot bring to boil the 4 cups of Apple Cider Vinegar, Water, Pickling Spices and Sugar for at least 30 minutes. Fill hot jars with beets and then with mixture to ¼ inch from the top of jar. Clean jar rim and place lids on. Place in water bath for 30 minutes. Remove and let sit for 12 hours undisturbed.

My mom made these when I was growing up and I couldn't get enough of them. It was one of my favorite things that she made. Every delicious meal she made would include her pickled beets. Especially around the holidays.
