8 oz. spicy sausage
1 large onion
1 red pepper, chopped
1 pkg. (8 oz.) yellow rice mix
12 oz. fresh or frozen thawed medium shrimp, peeled and deveined
1 cup frozen peas, thawed

Directions:
Directions:
Cook sausage in a skillet until lightly browned, 2 -3 minutes. Add onion and pepper; cook, stirring often until softened, 4 - 5 minutes. Add rice mix and 2 cups water. Bring to a boil; stir well. Cover, reduce heat to simmer. Cook until liquid is absorbed, 20 minutes.

Stir in shrimp. Cover and cook until shrimp are pink. Stir in peas; heat through, uncovered, 1 minute.

Serve on a large platter.
