2 cups sifted flour
2 tsp baking powder
1/2 tsp salt
2/3 cups shortening
1-1/4 cup sugar
1/2 tsp vanilla extract
1/2 tsp lemon extract
1 egg
3/4 cup well-drained crushed pineapple
1/2 cup finely chopped flake coconut, colored if desired
1/2 cup chopped pecans, if desired

Preheat oven to 350 degrees. Sift flour, baking powder and salt. Cream shortening, sugar, and extracts thoroughly. Beat in egg until mixture is fluffy. Blend in pineapple and dry ingredients. Drop by teaspoonfuls onto ungreased cookie sheet about 3 inches apart. Sprinkle with coconut. Bake about 15 minutes. Cookies are better if stored for 24 hours.
