1½ cups sugar
¼ cup flour
2 cups milk
3 eggs yolks, slightly beaten
1 cup coconut
1 tbsp. butter'
1 tsp. vanilla
1 9-inch pie shell baked
3 egg whites
¼ tsp cream of tartar
3 tbsp sugar
1 tsp vanilla
⅓ cup coconut

Directions:
Directions:
In a medium saucepan combine sugar and flour; gradually stir in milk. Cook and stir over MEDIUM heat until thickened and bubbly, about 6-8 minutes. Stir one cup of hot mixture into egg yolks; immediately return all mixture to hot mixture in saucepan and stir 3-4 minutes longer. Remove saucepan from heat and stir in coconut, butter, and vanilla. Pour into pie shell; set aside. Beat whites and cream of tartar to form peaks. Add sugar, a little at a time. Add vanilla and beat well. Spread on pie sprinkle remaining coconut on top. Brown in the oven at 350ºF. 10-15 min. Chill until set. about 3 hours.
