2 Large, ( Very Ripe) Bananas, mashed
Cup Butter
1 Cup Brown Sugar
1 Egg, beaten
1 tsp. Baking Soda, dissolved in 1T. cold water
1 Cups Flour
1 tsp. Nutmeg
1 tsp. Vanilla

Directions:
Directions:
Preheat oven to 350
Cream butter and sugar, then beat in egg. Add baking soda, flour, nutmeg and vanilla until combined.
Add well mashed bananas. Put batter into greased or paper lined muffin tins.
Bake for 20 minutes.
