three eggs, beaten until thick and lemon colored
One and ½ cups milk
¾ cup flour
One tablespoon sugar
½ teaspoon salt
one to two teaspoons butter

Directions:
Directions:
Stir milk into beaten eggs.
Add flour, sugar and salt.
Mix dry ingredients to eggs and milk until smooth.
Prepare a 8 or 10 inch cast iron frying pan or a Swedish griddle by heating thoroughly until the butter melts and sizzles.
Pour in ½ cup batter and rotate to cover bottom of skillet or griddle.
Keep skillet or griddle, moderately hot as pancakes cook quickly.
When underside is light brown, turn or flip over to brown on other side (about two minutes) and roll into thirds.
Serve with jam, lingonberry jam, or fresh berries and whipped cream. So yummy!
