1 lbs eggplant, sliced in inch sliced
1 cup ricotta
2 eggs
1 cup half and half
1 cup parmesan
salt and pepper
4 cups marinara sauce

Directions:
Directions:
Preheat oven to 425F

1) Arrange eggplant slices on cookie sheet and brush with olive oil. Roast eggplant slices in until tender about 30 min.

2) In meantime mix eggs, ricotta, cream, and half the cheese. 1/2 tsp salt and 1/4 tsp white pepper.

3) Layer eggplant, parmesan, marinara, ricotta, and eggplant, and repeat.

4) Bake 425F 10 minutes then turn oven down to 375F and bake another 20 minutes.
