1 1/2 lbs Eggplant ! inch slices! ! cup ricotta
2 eggs
1 cup half and half
1 cup parmesan
salt and pepper
4 Cups Marinara

Directions:
Directions:
Preheat oven to 425.

Arrange eggplant slices on cookie sheet and brush with olive oil. Roast eggplant slices in until tender about 30 min.

In meantime mix eggs, ricotta, cream, and half the cheese. " tsp salt and " tsp white pepper.

Layer eggplant, parmesan, marinara, ricotta, and eggplant, and repeat.

Bake 425 10 minutes then turn oven down to 375 and bake another 20 minutes.
