Directions:Mix sugar and cinnamon. Mix lightly through apples. Place in large skillet and heat over low heat until apples are tender. Remove from heat. Cool to room temperature. Line pie plate with half of pastry and trim crust, leaving 1 inch overhanging edge. Heap filling into pastry-lined pie plate and dot with butter. Roll remaining pastry and cut into 1/2 inch strips (Mom used a pastry wheel). Moisten edge of bottom pastry with water and lay half of pastry strips across the filling spacing them 1 inch apart. Weave first cross strip through center. Add another cross strip, first folding back every other strip going the other way. Continue weaving until lattice is complete. Fold lower crust over pastry strips. Press firmly around edge to seal. Heat oven to 425 degrees. Cover edge with 1 1/2 strip of aluminum foil to prevent excessive browning. Bake 50-60 minutes or until crust is nicely browned and filling is bubbling. Watch to ensure top does not brown too quickly.

Notes: Nana was known for her delicious pies! At one church dinner, the minister threw up his hands because there were more people than there was dessert. Good heavens! Nana saved the day. She sent my brothers home to pick up the five pies that were sitting on our counter. I don't know why we had five pies just sitting on our counter, but somehow Nana must have known that when she made the one pie she said she would make for the event, she might need another five pies, so she went ahead and made them. Why not? If making one pie, may as well make six! Needless to say, everyone at the event was flabbergasted!
