Add to Crock Pot:
1½ lbs of boneless pork loin (or chicken breast)
1 can (15 oz) of yellow or white hominy, drained
1 can (14.5 oz) Mexican style diced tomotoes
1 can (10 oz) mild enchilada sauce
1 large onion,, chopped
3 cloves of garlic
2 tsp cumin

Add after cooked:
½ c chopped cilantro
1 Tbsp lime juice
Top with tortilla chips, sour cream, lime wedges, or avocado (optional)

Directions:
Directions:
Combine the ingredients that are supposed to go in the crock pot and cook on low for 8 hours. Shred meat before serving. Add cilantro and lime juice. Top with desired ingredients.
