Martha's Oatmeal Cookies

1 Cup AP flour
1/4-tsp baking powder
1/4-tsp baking soda
1/4-tsp ground cinnamon
Salt
1 stick butter, room temperature
2/3-cup packed light brown sugar
1/3-cup sugar
1 egg
1 tsp vanilla
1-1/2 cups rolled oats
1/2 cup golden raisins
3/4-cups nuts

Preheat oven to 350º

Sift flour, baking powder, baking soda, cinnamon, and 1/2-tsp salt in a bowl.
Beat butter and sugars until pale and fluffy in MixMaster. Add in egg and vanilla and then flour mixture to create batter.

Finally, add oats, raisins and nuts.

Using a 1-1/4-inch ice cream scoop (or 1 TB) drop dough onto parchment-lined baking sheets. Bake until edges are golden. About 14 minutes.
 

Chouquettes

4 Eggs
6 TB butter
1 Cup All Purpose flour
1 oz Swedish Pearl sugar
1 Cup water
1/2-tsp salt

Glaze: 1 yolk with 1 tsp milk

Preheat oven to 400º

Warm water and butter in a small pot on the stove. As soon as it starts oiling, remove it from the stove and add the flour all at once, mixing with a wooden spoon until it be c comes a stretchy ball that comes easily off the sides of the pot. Cool 2 minutes.

Add the eggs one by bone but briskly while still mixing. Add the salt. Dough should be smooth and firm.
Put the pot back on the stove for 1-2 minutes to dry out the dough a bit.

Using 2 teaspoons, make little balls out of the dough and place on a baking pan covered with parchment paper. Leave enough space between the dough balls.

Sprinkle with the pearl sugar, pressing into the dough so they don't come off.

Bake 25-30 minutes. If they look like they're getting too dark, lower the heat to 375º
