8 medium sweet (like Vidalia) onions
8 ounces fresh chorizo, removed from casing
cup crumbled breadcrumbs
1 Tbsp. oregano
1 tsp. salt

Directions:
Directions:
Skin and parboil onions for about 10 minutes. Drain well. Cut a slice from the top and remove all but 1/4 inch of the shell. Skin chorizos and chop fine. Use some of the removed onion and mix with bread crumbs and chorizos. Add oregano and salt to taste. Place the filled onions in a pan with enough water to keep them from scorching and bake them in a preheated 375 degree oven until they are tender, about 30-40 minutes. If they are too soft to hold their shape well, bake them in well-greased muffin tins.

Makes 8 servings.
