1 cup sugar
1 cup sifted flour
3/4 cup butter, melted and cooled
1 tsp. grated lemon peel
Confectioner's sugar

Directions:
Preheat oven to 350 degrees. Grease and lightly flour madeleine pans or cupcake pans. In top of double boiler, over hot, not boiling water, with electric mixer at medium speed, beat eggs and granulated sugar until mixture heats to lukewarm - about 2 minutes. Set top of double boiler in cold water. Beat egg mixture at high speed, 5 minutes, or until very light and fluffy. With rubber scraper, gently fold in flour until well combined. Stir in cooled butter and lemon peel just until blended. Pour into prepared pans, using 1 Tbsp. batter for each cookie. Bake 12-15 minutes, or until golden. Cool 1 minute. Then remove from pans with small spatula; cool completely on wire racks. Then sprinkle with confectioner's sugar.
