2 T Olive oil
1/2# pancetta diced
5 cloves chopped garlic
1/2 c dry white wine
3/4c half and half
1 egg separate yolk and white
1/2# fettuccini
1/2c Pecorino Romano cheese or more

Cook pasta first. Save 1 cup of pasta water.
Jeff likes his stichy but you may want to add more cream for a creamier texture.

Saute pancetta and olive oil till crisp and then take out of the pan. Add garlic and cook for 30 seconds. Deglaze with white wine. Add cream. Simmer for 4 minutes. Reducing for thicker texture.
Now add cooked pasta to sauce and then one egg white. Stir well. Add cheese. Stir. Now egg yolk. Stir.
Add pasta water if needed at this point.
Add more pecorino to serve.
