2 cups rolled oats
½ sunflower seed butter
½ cup honey
1 cup sunflower seeds or pumpkin seeds
1 tsp vanilla
½ cup chocolate chips, melted

Directions:
Directions:
Preheat the oven to 350ºF.
Put the oats, sunflower seed butter, honey, seeds and vanilla into a large bowl and mix well.
Line 8' x 8" pan with parchment paper. Transfer the mixture to the dish and use your hands to spread to the edges. Take another piece of parchment andlay it across the top. Press firmly down or roll with a can - crucial to do this or they won't hold together.
Pull paper off the top and bake in preheated oven for 10 minutes. Keep the paper.
When the bars are finished baking, pull them out of the oven and put the paper back on top. Once again, press firmly down.
Allow to cool for a few minutes.
Meanwhile, melt the chocolate chips.
Spread or drizzle the chocolate over the bars evenly using a rubber spatula.
Put in fridge and cool completely, at least 30 minutes.
Pull the mixture out of the pan with the paper. Put on a cutting board and and use a sharp knife to cut them into 10 bars.

We took these bars on The Superior Coastal hike that we did with the kids in 2017. They lasted 5 days and were a hit.
