4 cups thinly sliced onions
2 tbsp butter
1 tbsp oil
1/2 tsp salt
1/2 tsp sugar
2 tbsp flour
1-1/2 qts beef bullion, canned or made with cubes
1/2 cup dry white wine
toasted rounds of French bread
grated Parmesan cheese

Directions:
Directions:
Heat margarine and oil in large saucepan, add onions, cover and cook slowly for 15 minutes. Uncover, increase heat to medium, add sugar and salt and cook 30 minutes, stirring frequently until onions are golden brown. Add flour and cook for 2 or 3 minutes, stirring constantly. Remove from heat and slowly add hot bouillon and wine. Return to burner and simmer, covered, for about 25 minutes, stirring occasionally. Skim if necessary. Taste and correct seasoning. When ready to serve, place toast round in soup bowl, pour soup over hot toast and sprinkle with Parmesan. If desired, place in hot oven or under broiler until cheese is brown and sizzling. Makes 2 quarts. Keeps several days in refrigerator and freezes well.
