8 eggs
8 round slices of ham or Canadian bacon, fried
4 english muffins
Salt and pepper
3/4 cup hollandaise sauce

Directions:
Directions:
Split english muffins in two and toast. Poach 8 eggs. Place two muffin halves on each serving plate and top each muffin half with a slice of ham and a poached egg. Pour hollandaise sauce over top.

Makes 4 servings.
