3-4 cups potatoes, peeled, sliced or diced
3 cups leeks, thinly sliced
2 quarts water
1 Tbsp. salt
1/3 cup heavy cream or 2-3 Tbsp. softened butter
2-3 Tbsp. minced parsley/cilantro or chives

Directions:
Directions:
Simmer the vegetables, water, and salt together, partially covered, for 40-50 minutes until vegetables are tender. Mash the cooked vegetables with a fork or food processor. Correct seasoning. Heat to a simmer and stir in cream or butter by spoonfuls. Pour into a tureen or soup cups and decorate with herbs.
