Clean potatoes and dice potatoes.
Place in pot of salted water and bring to a boil.
While waiting for potatoes to boil, patty sausage and place in large skillet.
Cook covered on high for 3-5 minutes or until brown.
Flip each sausage, turn off heat and cover for about 7 minutes.
Once the potatoes reach boiling, cover and turn off heat. Let sit on burner for 10-15 minutes.
Flip the sausage again and cover for an additional 7-10 minutes.
Remove sausage from pan and set on paper towel to drain and cover. Do not drain the sausage drippings.
Once the potatoes are tender, drain in a colander.
Add the drained potatoes to the sausage drippings in the fry pan.
Salt and pepper potatoes generously and turn on high.
After about 5 minutes, stir potatoes to continue browning for about another 5 minutes.
Turn off heat. add cheese and cover.
Serve potatoes and sausage with eggs cooked to your liking.
