Thick cut Bacon chunks, diced Onion, chopped fresh chilies, sliced Garlic, Tomato Sauce, Salt, Pepper
Portabello Mushrooms (one per person)
Parmesan cheese, Olive Oil

Directions:
Directions:
Remove stalk from mushroom caps. Chop the stalk.
Heat pan over medium heat, Add a splash of olive oil and then the bacon chunks, Cook til starting to take on color then add onions, chili, chopped mushroom stalks, and garlic. Wilt the onions then add the tomato sauce. Stir and simmer.

Place each mushroom cap on a lightly oiled baking pan. Fill the mushroom cavities with the tomato sauce mixture, Top with grated cheese and put under broiler until the cheese starts to brown.

We serve these with a variety of dishes. Sometimes we add diced chorizo sausage in place of the bacon.
