1 cup buttermilk
1 tsp baking soda
5 eggs, separated
2 cups sugar
1 stick butter
½ cup shortening
2 cups flour
1 tsp vanilla
1 cup chopped, toasted pecans
1 small bag coconut

icing:
1 8-oz package cream cheese, softened
½ stick butter, room temperature
1 box powdered sugar
1 tsp vanilla

Directions:
Directions:
Combine buttermilk and baking soda and let stand a few minutes. Beat egg whites until stiff. Cream butter, sugar, and shortening together. Add egg yolks, one at a time, beating well. Add buttermilk alternately with flour to the creamed mixture. Stir in vanilla. Fold in egg whites. Gently stir in pecans and coconut. Bake in 3 9" greased and floured cake pans.

Icing:
Cream the butter and cream cheese together until fluffy. Add sugar and beat about 2 minutes. Add vanilla and mix well until light and fluffy.
