1 cup flour, unsifted
1/2 tsp. salt
1 whole egg, plus 2 yolks
5 tsp. sugar
1 1/2 milk
3 Tbsp. melted butter

Directions:
Directions:
Put dry ingredients in mixing bowl and mix well. Add milk and stir until smooth. Add eggs and mix. Add butter. Set aside at least 1/2 hour to allow flour to absorb liquid and get light texture. Heat 7-9 inch crepe pan. Brush with melted butter when hot. Add just enough batter to form a thin pancake (2-3 Tbsp.). In about 1 minute when the crepe has browned, turn and cook the other wide for about 30 seconds. Slip onto saucer.

May be frozen in foil. Reheat covered in oven at 325 degrees.
