½ c. island tapioca
2 c. water
½ tsp. salt
2 c. milk
½ c. sugar
2 eggs, beaten
1 tsp. vanilla
nutmeg

Directions:
Directions:
Soak tapioca in water overnight in the top of a double boiler. Add salt and cool over direct flame for 30 minutes, stirring occasionally until clear.

Add milk and sugars, cook over boiling water for 15 minutes. Add a little tapioca mixtures to beaten eggs. Return to double boiler and cook for a few minutes longer or until the mixture coats a spoon.

Remove from fire and add vanilla. Sprinkle with nutmeg and cool.
