Avocados, Tomatoes, ½ each Red and Yellow Peppers, Red Onion, fresh Chilies to taste, Lime Juice, Cilantro, Brown Sugar, Salt, Pepper

Directions:
Split the avocados in half and remove the pits. Scoop out each ½ with a spoon. Use a mortar and pestle to mash the avocados. Dice the tomatoes and rinse them to remove the seeds. Dice the peppers and the onion. Chop the chili peppers, removing the seeds if you wish (we leave them in for extra kick). Add the chopped ingredients to the avocado mash. Stir gently. Chop the cilantro and add. Add lime juice to taste. Adjust seasoning with sugar, salt and pepper.

Keith's original recipe. If you don't have nice ripe avocados, you can use more tomatoes and the rest of the ingredients for a tasty salsa. Serve with tortilla chips or toasted bread or as a side to many chicken dishes.
