Meat Drippings, Butter, 1½ Tbs Flour, 2 cups Milk, Salt, Pepper

Directions:
Directions:
Heat the meat drippings in a small pan. If needed, add enough butter to make the total amount of fat in the pan about 2 Tbs. Whisk in the flour and make a roux. Cook, stirring continuously. Do not let the roux become too dark for this sauce. Slowly add the milk and continue to whisk. Bring to a boil then reduce heat to low and let the gravy cook and thicken. After about 5-10 minutes season with salt and pepper to taste.
