Ingredients: Meat of your choice, Vegetables of your choice, Cooked Rice, Vegetable Oil, Garlic, Eggs, Sesame Oil, Dark Soy Sauce, Light Soy Sauce, Pepper and/or Dried Chilies

Directions:Chop up the meat, vegetables and garlic. Heat a wok or large fry pan over medium heat. Add the meat and cook until done. Remove the meat from the pan and add the vegetables and a little more oil if needed. Once the vegetables start to go soft add the garlic. Stir a few times and add the cooked meat. Add the eggs and scramble with the meat and veg. Add the pre-cooked rice and stir well. Add a few drops of sesame oil along with the dark and light soy sauces. Finish off with pepper and/or dried chilies to taste. Remove from the heat and put a lid on the pan. Let rest for a few minutes before serving. |

Notes: This is a great and easy way to clean out the refrigerator. In Asia we normally have some rice left over in the cooker overnight and rather than waste it we cook up a quick fried rice dish. We usually use chicken or pork as the meat, but sometimes use shrimp. The vegetables can include onions, bell peppers, mushrooms, corn, frozen peas, or anything you have on hand. We serve this dish for lunch and sometimes even for breakfast (use more eggs and maybe sausage for the breakfast version).
