1 lb. ground pork or turkey
1-2 packages of firm tofu (I usually use 2)
3-6 scallions sliced into small rounds
1 tsp or to taste toasted sesame oil
Generous sprinkling of low sodium soy sauce
Salt and Pepper to taste
sprinkling of water if needed

Rice and hot sauce/rooster sauce for serving

Remove tofu from packaging, discard water, and place each block between heavy plates with a weight on top- leave them for about 10 minutes to drain out liquid.

Heat a heavy bottom pan and brown meat, draining if needed.

Cube the tofu into 3/4 in cubes. add to the meat in the pan. Sprinkle generously with soy sauce and salt and pepper. The meat and tofu should change color slightly. Add sesame oil and taste. Adjust seasoning. Cook until the tofu/meat is warmed through. Stir in scallions.

Serve over rice. Add spicy sauce if desired and stir everything together.
