Pastry for a 9" pie crust
½ cup shredded coconut
2½ cups milk
½ cup sugar
3 eggs
1 tsp vanilla
½ tsp salt
¼ tsp ground nutmeg

Directions:
Directions:
Sprinkle coconut over bottom of pie crust
Mix all other ingredients and beat with a whisk
Pour into pie crust (I placed the pie pan on a cookie sheet to enable me to transport to oven without spilling)
Bake 425 for 35 mins. or till puffs up in the middle and feels solid
Insert knife 1 inch form edge and it should come out clean
