3 cans Goya Navy Beans
1 onion, chopped
1 green pepper chopped
½ lb boneless pork chop diced into ½ inch cubes
¼ lb bacon lairds
1 can diced tomatoes (drained)
2 tbs ketchup
2 tbs maple syrup
2 tbs vinegar
2 tbs molasses
2 tbs brown sugar
½ tsp ground white pepper
½ tsp chili powder
1 tsp dry mustard

Directions:

Preheat an oven to 300ºF.

1) In Le Creuset or similar enamel coated cast iron pot; cook bacon and ground pork until browned, and onions and green pepper. Drain excess fat. Add can of tomatoes heat until boiling, about 5 min.

2) Stir in the ketchup, maple syrup, brown sugar, molasses, vinegar, salt, pepper, chili powder, and mustard into pot heat to boiling.

3) Pour the beans into pot and heat to boiling.

4) Cover, and bake in the preheated oven 3 hours. Stir the beans after they have cooked for an hour

5) Once the beans are tender and the sauce has reduced and is sticky, remove from the oven, stir, recover, and allow to stand 15 minutes before serving.
