1.5-2 pounds pork tenderloin
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
1 tsp paprika
1 tsp garlic powder
2 tsp chili powder
1 tsp Cumin
2 tsp Oregano
2 - 14-ounce cans crushed tomato
1 tablespoon vinegar
1 cup beef stock
1 cup beer or wine
Tabasco, optional
Cilantro and olives for serving, optional

Directions:
Directions:
Starting with the pork, put all the ingredients in crueset pot and cook at 300 for 4 hours.
Once cooked, Pour contents into a different pot or serving dish and shred apart the meat. Serve topped with cilantro and olives, over rice.
Or can be served with tortillas for taco filling.
