˝ cup green beans, trimmed
˝ cup sugar snap peas
1 tbs butter
2 tbs olive oil
1 small onion diced
2 cloves garlic or 1 garlic scape , chopped
kernels cut from 1 ear of corn
1 medium red or green pepper diced
1 small yellow squash cubed
1 medium red skin potato cubed
1 tbs butter
˝ tsp Old Bay seasoning

Directions:
Directions:
1) Blanch green beans and snap peas in microwave until crisp-tender, about 2 minutes.

2) Heat oil and butter in large skillet over medium-high heat. Add onions and garlic and sauté for 3-5 minutes until translucent.

3) Add green beans and snap peas, sauté 1 minute. Add squash, corn, and bell pepper. Sauté until vegetables about 10 minutes.

4) Add potato, water and add lid to pan. Mix in butter and Old Bay.

This is my attempt to recreate a recipe that is found at restaurants throughout the region during the summer.

Top with Chesapeake Beurre Blanc and Shrimp or crab cake for true Eastern Shore bay/farm to table experience.
