3 eggs
2 C sugar
1 C vegetable oil
1 Tb vanilla
2 C loosely packed grated zucchini
2 C flour
1 Tb cinnamon
1 ½ tsp baking powder
1 tsp salt
½ tsp baking soda
1 C chopped walnuts

Directions:
Directions:
• Preheat oven to 350°.
• In a large bowl, beat eggs until frothy.
• Add sugar, oil and vanilla.
• Beat until thick and evenly colored.
• Fold in grated zucchini and walnuts.
• Sift remaining ingredients together and fold into mixture in bowl.
• Pour batter into 3 greased and floured loaf pans.
• Bake for 45 minutes.
