Zucchini Nut Bread Recipe

3 eggs
2 C sugar
1 C vegetable oil
1 Tb vanilla
2 C loosely packed grated zucchini
2 C flour
1 Tb cinnamon
1 tsp baking powder
1 tsp salt
tsp baking soda
1 C chopped walnuts

Preheat oven to 350.
In a large bowl, beat eggs until frothy.
Add sugar, oil and vanilla.
Beat until thick and evenly colored.
Fold in grated zucchini and walnuts.
Sift remaining ingredients together and fold into mixture in bowl.
Pour batter into 3 greased and floured loaf pans.
Bake for 45 minutes.
