2 c. peaches diced
¼ c. minced red onion
2 t. minced jalepeño, remove ribs and seeds before mincing to reduce heat
⅓ c. chopped cilantro (or to taste if not fond of cilantro)
salt to taste

Directions:
Directions:
Place all of the ingredients in a bowl and stir to combine. Cover the bowl and refrigerate for at least 30 minutes or up to 1 day.
