8 eggs, separated
1/2 c. sugar, divided
12 oz. (3 sticks) butter
12 oz. chocolate broken up into pieces
1 c. heavy whipping cream
1 T. vanilla

Directions:
Directions:
1. Melt butter and chocolate on medium-low heat.
2. Beat egg whites and 1/4 c. sugar in a mixing bowl until stiff peaks form.
3. In a separate bowl, beat the egg yolks and remaining 1/4 c. sugar.
4. Pour the egg yolk mixture into the chocolate mixture and stir to combine.
5. Put the cream and vanilla into the chocolate mixture and stir.
6. Fold the chocolate mixture into the egg whites.
7. Divide the mousse into individual servings (I use small plastic cups).
8. Refrigerate the mousse overnight.

This recipe came from a French restaurant in southern California I would go to with my mom in my teenage years. I have been making it ever since.
