Oatmeal Carrot Muffins Recipe

C white flour
C whole wheat flour
C oatmeal
1 tsp baking powder
tsp salt
tsp baking soda
1 tsp cinnamon
tsp nutmeg
C brown sugar
C oil
1 egg
tsp vanilla
1 (4 oz jar baby food carrots

Preheat oven to 400.
Mix all ingredients together thoroughly with electric mixer.
Grease muffin tins or line with baking cups.
Bake for 20 minutes.
Makes 12 muffins. (Two recipes will make 72 mini muffins.)

I don't remember where I got this recipe, but I do remember that Joel would eat the whole thing! This was one of his favorites. The muffins look funny because we aren't used to breads looking a dark orange color, but they taste fabulous. I have never known anyone who was willing to try it not like it. This was one that I made frequently on school mornings. I prepped all the dry ingredients the night before and even got the muffin tin ready. The next morning it was super easy to add the rest of the ingredients.
