½ C white flour
½ C whole wheat flour
¾ C oatmeal
1 tsp baking powder
¾ tsp salt
¾ tsp baking soda
1 ¼ tsp cinnamon
½ tsp nutmeg
¾ C brown sugar
½ C oil
1 egg
½ tsp vanilla
1 (4 oz jar baby food carrots

Directions:

• Preheat oven to 400°.
• Mix all ingredients together thoroughly with electric mixer.
• Grease muffin tins or line with baking cups.
• Bake for 20 minutes.
• Makes 12 muffins. (Two recipes will make 72 mini muffins.)

I don't remember where I got this recipe, but I do remember that Joel would eat the whole thing! This was one of his favorites. The muffins look funny because we aren't used to breads looking a dark orange color, but they taste fabulous. I have never known anyone who was willing to try it not like it. This was one that I made frequently on school mornings. I prepped all the dry ingredients the night before and even got the muffin tin ready. The next morning it was super easy to add the rest of the ingredients.
