1½ C whole wheat flour
⅓ C packed brown sugar
3 tsp baking powder
½ tsp salt
1 tsp cinnamon
½ C wheat germ
¾ C unsulfured raisins
⅔ C milk
⅓ C soy or other cold-pressed oil
2 eggs, slightly beaten

Directions:
Directions:
• Preheat oven to 400°.
• Mix first 7 ingredients in bowl.
• Add remaining ingredients and mix only until dry ingredients are moistened.
• Fill greased 2½ inch muffin pan sections 2/3 full. If desired, instead of greasing muffin pan cups, place
paper baking liners in each cup.
• Bake for 20-25 minutes.

Yields: 12 muffins
