Cinnamon Raisin Muffin Recipe

1 C whole wheat flour
⅓ C packed brown sugar
3 tsp baking powder
tsp salt
1 tsp cinnamon
C wheat germ
C unsulfured raisins
⅔ C milk
⅓ C soy or other cold-pressed oil
2 eggs, slightly beaten

Preheat oven to 400.
Mix first 7 ingredients in bowl.
Add remaining ingredients and mix only until dry ingredients are moistened.
Fill greased 2 inch muffin pan sections 2/3 full. If desired, instead of greasing muffin pan cups, place
paper baking liners in each cup.
Bake for 20-25 minutes.

Yields: 12 muffins
