1 C all-purpose flour
C white sugar
tsp salt 2 tsp baking powder 1 tsp ground cinnamon ⅓ C vegetable oil 1 egg ⅓ C milk 2 apples, peeled, cored and chopped C white sugar
⅓ C all-purpose flour C butter, cubed 1 tsp ground cinnamon

Directions:

Preheat oven to 400.
Grease six muffin cups or line with paper muffin liners. (Always fill the empty muffin tins with water when
cooking. It prevents the pan from burning.)
Stir together 1 C flour, C sugar, salt, baking powder and 1 tsp cinnamon.
Mix in oil, egg and milk.
Fold in apples.
Spoon batter into prepared muffin cups, filling to the top of the cup.
In a small bowl, stir together C sugar, ⅓ C flour, butter and 1 tsps cinnamon.
Mix together with fork and sprinkle over unbaked muffins.
Bake for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
