2 tbsp extra virgin olive oil
1 lb Brussels sprouts, sliced thin (4 cups)
Kosher salt
Black pepper
12 oz ham, diced
1 red bell pepper, diced (1 cup)
½ cup pine nuts

Directions:
Directions:
1. Heat a large non-stick skillet over medium-high heat.
2. Add oil, brussels sprouts, salt, and pepper and cook about 2-3 minutes. Add in the ham and bell pepper and stir until warmed through.
3. Garnish with pine nuts.
4. Serve warm. (Also good served cold)
