2 tbsp extra virgin olive oil
1 red onion, diced small (1 cup)
1 red bell pepper, diced (1 cup)
8 oz brown mushrooms, sliced (2 1/2 cups)
kosher salt
black pepper
8 oz ham, diced
10 eggs, whisked

1. Preheat oven to 375║.
2. Heat a large, oven proof, nonstick skillet over medium heat. Add oil.
3. When oil is hot add onion, bell pepper, and mushrooms. SautÚ for about 3-4 minutes until veggies are tender.
4. Add salt, pepper, and ham.
5. Add in eggs and cook a few minutes until bottom is set. Transfer to preheated oven and cook for about 10 minutes until the center has set.
