3 eggs
1 ¼ cups sugar
1 cup oil
¼ cup lemon juice
2 teaspoons grated lemon peel
1 ¾ cups grated zucchini
2 cups flour
2 teaspoons baking soda
1 teaspoon salt
¼ teaspoon baking powder
1 cup chopped nuts

Directions:
Directions:
In a medium bowl, combine eggs, sugar, oil, lemon juice and lemon peel. Beat until well blended. Add zucchini. Sift together the flour, baking soda, salt and baking powder, stir into zucchini mixture and then fold in nuts. Pour into a greased 9 X 13 inch pan and bake at 350 degrees for 45 mins. or until cake springs back when touched. Cool in pan. Frost with glaze, if desired.

Lemon Glaze: Beat 1 cup confectioners’ sugar, ½ teaspoon lemon peel, grated; 1 teaspoon lemon juice and 2 Tablespoons milk until smooth.
