Eggs, Milk, Worcestershire Sauce, Tabasco Sauce, Salt, Pepper, Oil (if needed)
Chopped Green Onions (just the green part), Chopped Green Peppers, Velveeta Cheese

Whisk together the eggs, a touch of milk, a few drops of each of the sauces and the salt and pepper.

Heat a large frying pan over medium. Once it is warm add the oil (if you have not already cooked and reserved some sausage or bacon fat in the pan). Add the eggs and stir gently as they cook.

Add the chopped vegetables on top of the eggs when they are about ½ way cooked. When the eggs are almost completely done, top with slices of cheese. Fold the omelette in half and take off the heat. Put a lid on the pan and let the eggs rest a few moments before serving.

This is a family classic. The eggs are cooked in a large pan and the omelette should be very large (not individual). Note that the onions and peppers are added raw and cooked into the eggs. We have used other cheeses for this recipe, but Velveeta is the classic choice. To make this fully traditional, serve with breakfast sausage patties. Goes well with Bloody Marys.
