2 ½ pounds white thin skin potatoes, peeled and diced
2 teaspoons white vinegar or cider vinegar
1 (6-ounce) jar diced pimiento, drained and chopped
1 cup frozen sweet peas
1 small white onion, peeled and left whole
½ cup mayonnaise or just enough to bind salad
salt and pepper

Directions:
Directions:
Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return potatoes to hot pot to dry them. Sprinkle with vinegar, then transfer them to a bowl and let them cool. Add pimiento and peas to the bowl. Using a hand held grater, grate the small white onion over the potatoes. Add ½ cup of mayonnaise dressing to the bowl, or to your liking, to bind. Season potato salad with salt and pepper.
