2 pounds white thin skin potatoes, peeled and diced
2 teaspoons white vinegar or cider vinegar
1 (6-ounce) jar diced pimiento, drained and chopped
1 cup frozen sweet peas
1 small white onion, peeled and left whole
cup mayonnaise or just enough to bind salad
salt and pepper

Directions:
Directions:
Boil potatoes in salted water for 12 minutes, until fork tender. Drain and return potatoes to hot pot to dry them. Sprinkle with vinegar, then transfer them to a bowl and let them cool. Add pimiento and peas to the bowl. Using a hand held grater, grate the small white onion over the potatoes. Add cup of mayonnaise dressing to the bowl, or to your liking, to bind. Season potato salad with salt and pepper.
