Cinderella Cake

2 cups granulated sugar
4 eggs
1 cup oil
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon salt
2 cups pumpkin
Directions:
Directions:
Preheat oven to 350º. Beat sugar and eggs until well-blended. Add oil, continuing to beat. Combine dry ingredients and blend into egg mixture. Add pumpkin and mix well. Pour into well-greased 9-inch bundt pan. Bake for 50-55 minutes, or until a toothpick inserted in center comes out clean. don't overbake. let cake stand 10 minutes, then turn out on a rack or platter to cool. Frost with Coachman's Icing. Optional: can sprinkle with cinnamon for decoration.
 

Coachman's Icing
Ingredients:

5-ounce cream cheese, softened
1 stick butter, softened
1/2 box powdered sugar, sifted
1 teaspoon vanilla

Directions:
Blend cream cheese, butter, and vanilla. Add powdered sugar for desired consistency. Chill 10 minutes or until cake is completely cool. Frost cake.
