16 oz. can peach halves in juice or extra light syrup (drained)
1 beaten egg
1/3 c. oil
1 tsp. vanilla extract
1/4 tsp almond extract
1/2 tsp grated orange peel (or drop of orange extract)
1 c. flour (or 1/2 c. all purpose flour and 1/2 c. wheat flour)
1 c. old fashioned oats
3/4 c. brown sugar (packed)
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 c. raisins

Directions:
Directions:
Preheat oven to 400º F.

Chop 2 peach halves, set aside.

Puree in a blender remaining peach halves to measure 1 c.
Combine peach puree, egg, oil, and all extracts.
Set aside.

Combine dry ingredients, except for raisins.

Mix well.

Pour liquid ingredients into dry ingredients.
Mix just until dry ingredients are moistened.

Fold in chopped peach halves and raisins.

Spoon into paper-lined or greased muffin cups.

Bake above oven center for 20 minutes or until toothpick inserted in center comes out clean.
